Happy New Year!! I can’t believe that it is 2018. Time flies seems like yesterday I was watching Hallmark Countdown to Christmas. (was I the only one?? I am going through withdrawals lol) I have started a new diet called keto aka low carb diet. It is just in time for New Year Revolution, or for all those that are health conscious. So for the New Year I am going to be sharing more low carb, keto friendly meals. Time to get ready for beach season, we are starting early here at TCL !!
Today is all about the salad and we taking it to Mexico, my version of Taco Salad sans the tortilla. This Taco Salad is straight forward, with season ground beef, lettuce, salsa, sour cream and my favorite guacamole.
Today recipe is simple and fresh and could be enjoyed whenever you need something quick and easy.

- 1 pound ground beef
- 2 tbsp homemade taco seasoning
- 4 cups shredded lettuce
- 1 small onion chopped
- 1/4 cup shredded cheddar cheese
- 1/2 cup guacamole
- 1/4 cup sour cream
- 1/4 cup tomato diced
- 1 Tbsp. Chili Powder
- 1/4 tsp. Garlic Powder
- 1/4 tsp. Onion Powder
- 1/4 tsp. Crushed Red Pepper Flakes
- 1/4 tsp. Dried Oregano
- 1/2 tsp. Paprika
- 1 1/2 tsp. Ground Cumin
- 1 tsp. Sea Salt
- 1 tsp. Black Pepper optional
In a large skillet over medium heat, add ground beef and begin stirring in skillet with a wooden spoon, breaking up clumps into small pieces. As meat cooks, stir in taco seasoning. Allow to cook through and set aside.
-Wash lettuce. Portion into two bowls and top with onion, tomato and cheddar cheese. Top with taco meat, sour cream and guacamole.
