This week me and Chris set a new challenged for our self, of not buy any new meats and to eat whatever we had stored in the freezer. The one common protein found in almost everyones freezer is…chicken. Chicken is verstile it can sautéed, fileted, grounded, cubed and the list goes on. So as you can imagine I became “chickened” out. So decided to take couple of pieces of chicken breast and turn it into ground chicken… the long yet satisfying way. Don’t worry you can just buy ground chicken
Chicken meatballs are a party favorite especially for those guest that do not eat pork. moist and delicious… where can you go wrong. Traditionally meatballs are served in barbeque sauce or pasta sauce, but that is plain and boring. I needed sauce that was sweet and tangy but was not traditional in a sense of off the shelf. I went with my go to Ginger Garlic Sauce to coat the meatballs.
Now let’s get to the good part… how to cook the meatballs. First, start off with ground chicken in a bowl. Second, combine the salt pepper, scallions, bread crumbs, and egg to the chicken. Next, thoroughly mix the ingredients.
Time to form the meatballs! To ensure a uniform size use a cookie scooper and place the meatballs on baking sheet lined with wax paper and bake for 13 minutes.
Time to make the sauce while the meatballs bake in the oven. In a separate pot combine and bring to boil 1/2 cups of soy sauce, 1 table spoon of mince garlic and ginger, a dash of sesame seed oil, and 1/4 of cup brown sugar. The mixture should began to thicken up as the brown sugar caramelizes. Toss the meatballs in the sauce so as when the sauce cools it coats the meatballs. Sprinkle some sesame seeds on the meatballs and serve and enjoy.
- Canola oil , for brushing
- 1 pound ground chicken
- 1/2 cup plain bread crumbs
- 1/3 cup minced scallions ,
- 1 large egg
- Sesame Ginger Sauce:
- 3 tablespoons minced peeled fresh ginger
- 2 garlic cloves , minced
- 2 teaspoons toasted sesame oil
- 2 teaspoons soy sauce
- 1/4 teaspoon kosher salt
Preheat the oven to 450;
Spray baking sheet with cooking spray.
In a large bowl, mix together all of the ingredients until well incorporated.
Form the mixture into 1 1/2 -inch balls and arrange on the baking sheet.
Bake for 13 minutes, or until browned.

Toss the meatballs in the sauce to coats the meatballs.
Sprinkle some sesame seeds on the meatballs
